Breakfast Potato Patty
Servings: 4-6
Ingredients
- 3 large Potatoes
- 1 small Onion
- 2 Eggs
- 1/2 cup Sifted flour
- 3/4 tsp. Salt
- Dash of pepper
- Shortening for frying
Instructions
Grate potatoes and onion. Potatoes do not have to be peeled. Add the unbeaten eggs and stir until blended. Add flour, salt and pepper. Mix well. Heat the shortening in a 10 inch skillet over medium-high heat. Spoon potato mixture into the skillet and pat it down lightly with a spoon. Fry the patty until golden brown on bottom, turn and brown the other side. If you desire, smaller one serving-sized patties can be made. Serves 4-6
